Calamari

These gorgeous and delicious fried calamari rings with alioli are a classic seaside dish from Santander, Spain.

Ingredients

For the Squid:

  • 1 cup Milk
  • Pinch of Salt
  • 1 handful Fresh Thyme
  • 1 ea. Squid

For the Batter:

  • 2 Eggs
  • 1 cup Milk
  • 1 cup All-Purpose Flour
  • Frying Oil

For the Alioli:

  • 1 Egg
  • 1/2 Lime, juice
  • 2 tbsp. Dijon Mustard
  • Pinch of Salt
  • 1 head Garlic, roasted
  • 1/2 cup Vegetable Oil
  • Pepper
  • Lime Zest

Directions to make the best calamari

  1. Cut the squid into 1/2 in. rings. Tenderize by soaking them in milk salt and thyme for 15 mins.
  2. Make a simple batter mixing the flour, eggs and milk.
  3. Cover each ring with batter and fry until golden in oil.
  4. Prepare the alioli slowly blending the egg, lime juice, mustard, salt and garlic. Gradually add oil until it thickens like mayonnaise. Season with pepper and lime zest.
  5. Serve freshly fried rings with alioli.

Pro Tips

Roast the head of garlic wrapping it in aluminum foil with 2 tsp. olive oil and sea salt. Bake for 30 mins in medium heat.
