Holiday Empanadas

Recipe

Ingredients

For the dough:

  • 3 cups Flour + extra for dusting
  • ½ tsp Salt
  • 1 ½ sticks Butter
  • 1 Egg
  • ½ cup Milk

For the fillings:Spicy Potato & Cheese

  • 1 Russet Potato, peeled & diced
  • 2 tbsp. Ají Amarillo paste
  • ¼ cup shredded Cheese

Argentinian Beef

  • ½ lb. ground Beef
  • ¼ yellow Onion, diced
  • 1 hard boiled Egg, chopped
  • 1 tbsp. Olive Oil
  • Salt & pepper, to taste

Savory Vegetable

  • ½ yellow Onion, diced
  • 1 can Sweet Corn, drained
  • 1 Tomato, diced
  • 1 tbsp. Cumin
  • 1 tbsp. Olive Oil
  • Salt & pepper, to taste

Sweet Brazil Nut

  • 2 Eggs
  • ¼ cup Sugar
  • ¼ tsp. Salt
  • ¾ cup Honey
  • 1 tbsp. Butter, melted
  • 1 tsp. Vanilla
  • 2 cups Brazil nuts, chopped
  • ⅓ cup Blue Cheese

Directions

For the dough:

  1. Combine the dry ingredients in a food processor. Pulse as you add the remaining ingredients one by one. Pulse until sticky dough forms.
  2. Remove from food processor and knead on a flour dusted board. Roll out flat until about ¼” thick. Cut out small round pieces by tracing a martini glass or bowl, depending on how big you want your empanadas to be. Keep in mind, you need to be able to fold them in half and seal them.

For the fillings:Spicy Potato & Cheese

  1. Place potatoes into a pot of cold salted water and bring to a boil.
  2. Boil for about 10 minutes, or until you can easily pierce them with a fork.
  3. Drain and cool.
  4. In a medium bowl, mix potatoes together with remaining ingredients. Reserve.

Argentinian Beef

  1. In a small saute pan, heat the olive oil.
  2. Add the onions and cook for 2-3 minutes, or until they start to soften.
  3. Add the beef and cook to medium-rare.
  4. Season with salt & pepper.

Savory Vegetable

  1. In a small saute pan, heat the olive oil.
  2. Add the onions and cook for 2-3 minutes, or until they start to soften.
  3. Add the remaining ingredients.
  4. Season with salt & pepper.

Sweet Brazil Nut

  1. Preheat oven to 350°F.
  2. Beat eggs together then add one at a time: sugar, salt, honey, butter and vanilla. Mix in brazil nuts.
  3. Pour into baking dish and place in oven.
  4. Reduce heat to 325°F and bake for 1 hour 20 min.
  5. Let the filling set before removing from the baking dish and combining with blue cheese.
