Galician Tuna Pie

This delicious tuna pie is inspired by empanadas gallegas, a classic staple from Galicia, Spain.

Recipe

Ingredients

  • 1 Red Bell Pepper
  • 1 Red Onion
  • 2 Green Onions
  • 1 cup Corn kernels
  • 1 cup Cream Cheese
  • 3 Eggs
  • 4 cans Tuna
  • 1 tbsp. Cilantro, chopped
  • 2 layers of Pie Dough
  • 2 tbsp. Ginger, grated
  • Salt and Pepper
  • 3 tbsp. Olive Oil
  • Butter and Flour for mold

Directions

  1. Chop the onions and pepper and brown in olive oil. Add the corn kernels, cook for 5 minutes and set aside.
  2. In a bowl, mix the eggs with the cream cheese, vegetables, tuna and add to a mold lined with pie dough.
  3. Finish with grated ginger and cover with the other dough layer.
  4. Pinch with a fork and bake for 30 minutes at 325° F.

Serve with a side of green salad.
