This delicious tuna pie is inspired by empanadas gallegas, a classic staple from Galicia, Spain.

Ingredients
- 1 Red Bell Pepper
- 1 Red Onion
- 2 Green Onions
- 1 cup Corn kernels
- 1 cup Cream Cheese
- 3 Eggs
- 4 cans Tuna
- 1 tbsp. Cilantro, chopped
- 2 layers of Pie Dough
- 2 tbsp. Ginger, grated
- Salt and Pepper
- 3 tbsp. Olive Oil
- Butter and Flour for mold
Directions
- Chop the onions and pepper and brown in olive oil. Add the corn kernels, cook for 5 minutes and set aside.
- In a bowl, mix the eggs with the cream cheese, vegetables, tuna and add to a mold lined with pie dough.
- Finish with grated ginger and cover with the other dough layer.
- Pinch with a fork and bake for 30 minutes at 325° F.
