Calabacitas Salad

Look no further than this easy zucchini salad recipe for a healthy lunch or dinner. Simple but timeless!



For the salad:

  • 1 Zucchini, thinly sliced
  • 1 can Sweet Corn, drained
  • 2 Tomatoes, diced
  • ½ Winter Squash, peeled & thinly sliced
  • ½ Red Onion, thinly sliced
  • ¼ cup White cheese, shredded

For the dressing:

  • 1/4 cup White Wine Vinegar
  • 2 tbsp. Lemon juice
  • 3 tbsp. Sugar
  • 1 Garlic Clove , minced
  • 1 tsp. Oregano
  • 1 tsp. Salt
  • 1 tsp. fresh ground Pepper
  • 1/3 cup Olive Oil


  1. Combine all ingredients for the salad except the cheese in a large mixing bowl.
  2. Combine all ingredients for dressing except the olive oil in a separate bowl. Whisk vigorously while slowly streaming the olive oil into the bowl until a vinaigrette forms.
  3. Drizzle dressing over vegetables and mix well. Lightly toss in the white cheese. Plate and garnish with more shredded white cheese.

Pro Tips

Add as many other vegetables as desired. Alternatively you can also add your favorite grilled meat for extra protein. If you don’t eat meat, you can add proteing using our Perfect Protein Seasoning and Rub!
