Cordobés Pie

Ingredients

  • 1 White Onion, squared
  • 1 Garlic Clove, chopped
  • 2 lb. Ground Beef
  • 1 cup Olives, chopped
  • 3 Hard-Boiled Eggs
  • Salt & Pepper
  • 2 tbsp. Paprika
  • 1 tbsp. Cumin
  • 1 tbsp. Chili Flakes
  • 2 lbs. Boiled Potatoes
  • 1 cup Milk
  • 3 tbsp. Butter
  • 2 Egg Yolks
  • Parmesan Cheese

Directions

  1. Stir fry the onion, garlic and ground beef. Add the hard-boiled eggs and olives. Season with salt, pepper, cumin, chili flakes and paprika.
  2. Boil the potatoes and make a purée with salt, milk, butter and pepper.
  3. Layer a baking casserole with potato purée and add the seasoned beef. Cover with purée and grate cheese on top.
  4. Bake 15 mins. at 350°F, until the top layer is golden brown.
