Tomato Cashew Pesto

Ingredients

  • 5-7 Grape Tomatoes or 1 medium Tomato
  • 1 cup Basil Leaves
  • 2 tbsp. Cashew Butter or ¼ cup Cashews soaked in boiled water for 15-20 minutes
  • ½ cup Olive Oil
  • 1 Garlic Clove
  • 1 tsp. Sea Salt
  • Directions

    1. Put all the ingredients in a food processor and process until it’s creamy.
    2. Pour over your favorite pasta. Garnish with chili powder and basil, and serve.
