Warm about a third of the pomegranate juice with the sugar in a small saucepan just until the sugar dissolves, about 2 minutes. Don't let it boil.
Remove from heat and stir in the remaining pomegranate juice, lime juice, and salt.
Taste and adjust — it should taste slightly too sweet and slightly too tart at the same time, since freezing will mellow both.
Pour the mixture into a shallow metal or glass baking dish. Shallow matters here; a deep dish freezes unevenly and takes twice as long.
Freeze for 30 minutes, then rake the surface thoroughly with a fork, breaking up any ice that's started to form at the edges.
Repeat the raking every 30 to 45 minutes for the next 3 to 4 hours, until the entire mixture is made up of loose, separate ice crystals with no solid chunks remaining.
Serve immediately in chilled glasses, topped with a scattering of fresh pomegranate seeds for crunch and color.

The Mistake That Turns Granita Into a Popsicle

Walking away and forgetting to rake it is how a granita stops being a granita. Skip even one or two raking sessions and the mixture freezes into a solid slab instead of loose crystals, and at that point you're not looking at granita anymore — you're looking at a pomegranate ice block that needs a knife instead of a fork.
