Shrimp Lettuce Wraps

Ingredients

FOR THE FILLING

  • 8 large Shrimp, peeled & deveined
  •  1⁄4 cup Cherry tomatoes
  • 1 clove Garlic, minced
  • 1 tsp. Chipotle En Adobo, chopped or mashed into paste
  • 1 tbsp. Orange juice, freshly squeezed
  • 1 tsp. Honey
  • 1 tsp. Kosher salt
  • 2 tbsp. Olive oil + as needed
  • FOR THE LETTUCE CUPS

    • 4 leaves Romaine lettuce, whites removed
    • 2 wedges Lime
    • 1 Avocado, sliced
    • 4 sprigs Fresh cilantro
    • Option: add Crema, diced pineapple and/or mango as desired
    • Directions

      FOR THE FILLING

      1. Combine ingredients in a large mixing bowl and toss to coat evenly.
      2. Heat a skillet on medium-high heat. Add mixture and cook until shrimp turns pink. Add more olive oil as needed to prevent sticking.
      3. FOR THE LETTUCE CUPS

        1. Fill each lettuce leaf with about 3 oz. of filling.
        2. Top with Avocado and cilantro. Serve with lime wedges and enjoy!
