Cowboy Breakfast Skillet

Recipe

Ingredients

  • 1 cup small Red Potatoes,
  • 4 slices of bacon
  • 2-3 fried Eggs
  • 1/2 cup Black Beans
  • ¼ cup Salsa Verde 
  • ¼ cup shredded Cheese
  • Sour Cream
  • Fresh Cilantro
  • Olive Oil
  • Salt & Pepper

Directions

  1. Preheat oven at 375°F
  2. Cut potatoes into ¼ pieces
  3. Drizzle sheet pan with olive oil and add potatoes. Season with salt and pepper. Place in oven and bake for 10-15 minutes.
  4. In a separate lodge skillet cook the bacon and reserve all the bacon grease!
  5. Remove potato pan from oven. Add potatoes to lodge skillet/bacon grease and saute until crispy.
  6. Add remaining ingredients.

Pro Tips

Serve in lodge skillet with toast or tortilla & coffee
