Ingredients
- 1 cup small Red Potatoes,
- 4 slices of bacon
- 2-3 fried Eggs
- 1/2 cup Black Beans
- ¼ cup Salsa Verde
- ¼ cup shredded Cheese
- Sour Cream
- Fresh Cilantro
- Olive Oil
- Salt & Pepper
Directions
- Preheat oven at 375°F
- Cut potatoes into ¼ pieces
- Drizzle sheet pan with olive oil and add potatoes. Season with salt and pepper. Place in oven and bake for 10-15 minutes.
- In a separate lodge skillet cook the bacon and reserve all the bacon grease!
- Remove potato pan from oven. Add potatoes to lodge skillet/bacon grease and saute until crispy.
- Add remaining ingredients.

Serve in lodge skillet with toast or tortilla & coffee
