Ingredients

4 tbsp of heart healthy* Mazola® Corn Oil

½ cup flour

1 cup buttermilk

1 cup of panko

2 tsp garlic powder

2 tsp onion powder

4 tsp paprika

8 mini chicken breast fillets

4 buns

1 ripe avocado, peeled, stoned and sliced

½ iceberg lettuce, shredded

Sea salt and freshly ground black pepper

Mexican hot sauce

For the Yogurt Sauce

1 Greek yogurt

½ garlic clove, crushed

1 tsp apple vinegar

Parsley, to taste

How to prepare the best California Chicken Sandwich

First things first: put the flour, buttermilk and panko into three different plates.

On one plate, season the flour with salt and pepper.

On the second plate, add the garlic powder, onion powder, paprika and salt and pepper to the buttermilk and mix well.

Dip a piece of chicken into the buttermilk mix so that it is completely covered. Remove and shake off any excess, then dip into the flour, and then into the panko plate.

Allow any excess buttermilk to drip off. Turn over to make sure they are completely coated. Then repeat with the remaining chicken pieces.

Pour the Mazola® Corn Oil into the preheated pan.

Place the chicken breasts and cook for 15–20 minutes, until golden and cooked through, turning halfway through cooking.

Meanwhile, make the yogurt dressing; mix together the yogurt, crushed garlic and vinegar with a little salt and pepper. Taste and add more vinegar if needed.

Slice open the buns and divide the avocado slices between them. Top it with shredded iceberg lettuce.

Once the chicken breasts are cooked, place them on top of the lettuce and spoon over dollops of the yogurt dressing, as well as a drizzle of hot sauce, if desired.

Close the buns and serve this delicious California chicken sandwich immediately to enjoy it even more!
