Ingredients

For the Cookie Dough:

  • 8 oz. Unsalted Butter, room temp.
  • 1 1/2 cups Sugar
  • 1 Egg
  • 1 Egg yolk
  • 1 tsp. Vanilla Extract
  • 4 cups All-Purpose Flour
  • 1 tbsp. Baking Powder
  • 1/2 tsp. Salt
  • 1/2 cup Irish Cream

For the Irish Cream Filling:

  • 8 oz. Unsalted Butter, room temp.
  • •2 1/2 cups Powdered Sugar
  • •6 tbsp. Irish Cream
  • •2 tbsp. Instant Coffee

To Garnish:

  • 1 cup Melted Dark Chocolate for dipping
  • Green sprinkles for decorating

Directions

For the Cookie Dough:

  • Combine All-Purpose Flour along with baking power and salt. Reserve in bowl.
  • In a mixer cream the butter and sugar until it's light and fluffy. Add egg and egg yolk.
  • Add the flour mixed in with baking powder and salt.
  • Mix in vanilla extract, then slowly add Irish cream.
  • Wrap cookie dough in plastic wrap and refrigerate for at least an hour.
  • Roll out dough & cut out cookies using a clover-shaped cookie cutter.
  • Bake cookies for 8-10 mins. at 375°F.
  • Let cookies chill at least 30 minutes.
  • Sandwich cookies with Irish Cream Filling, dip in melted dark chocolate and garnish with sprinkles.

For the Irish Cream Filling:

  • Cream the butter with sugar.
  • Add coffee and Irish cream and keep mixing until it thickens.
  • Refrigerate for an hour in a plastic bag.
