Apple Kale Salad

Ingredients

For the salad:

  • 1 small or half a big Granny Smith Apple
  • 10 Romaine Lettuce leaves, rinsed and dried
  • 2-3 Kale leaves
  • 1 Green or Red Chili or both
  • For the dressing:

    • ¼ cup Olive Oil
    • Lemon juice from 1 Lemon
    • 1 tbsp. Apple Cider Vinegar
      2 tsp. Agave syrup or Maple
    • 2 tsp. Dijon Mustard
    • Salt
    • Directions

      For the salad:

      1. Peel and julian the apple. Slice the chili peppers.
      2. Slice the lettuce leaves. Remove the stem of the kale and discard, and slice it finely.
      3. Add everything to a bowl and prepare the dressing.
      4. For the dressing:

        1. Add all the dressing ingredients into a small bowl and bit with a fork.
        2. Pour the dressing over the salad, toss thoroughly and serve.

          Remove chili peppers for a kid-friendly or non-spicy version.
