Our friendly guest Chef Pablo Marinaro shares a recipe for his version of an exquisite and fresh avocado soup with Vorí Vorí, a Paraguayan delicacy.

Ingredients
For the Vorí Vorí:
- 1 cup Corn Flour
- 2 oz. Fresh Goat Cheese
- 1/2 cup Chicken Stock
- Salt
- Cumin
- Olive Oil
For the Avocado Soup:
- 1 Leek
- 1/2 Onion
- 2 Avocados, ripe
- 1/2 cup Water
- 1 cup Cream
- Juice of 1/2 Lemon
- 1 Green Apple
- 1 Green Onion
- Fresh Cilantro Leaves
- Olive Oil
- Salt & Pepper
Directions
For the Vorí Vorí:
- Mix the corn flour with the goat cheese. Add a pinch of salt and chicken stock, incorporating slowly until forming a non-stick dough.
- Shape dough into rounds, about the size of a golf ball.
- Cook in boiling water, reserve.
- Bake until golden with a little olive oil before serving.
For the Avocado Soup:
- Lightly fry the leek, onion and garlic until the onion becomes transparent.
- Blend with water, avocados, lemon juice and cream until smooth.
- Season with salt and pepper to taste.
- Cut green apple in slices and serve with cilantro leaves.
Pro Tips
The word “vorí vorí” comes from the Guarani language, one of the two official languages of Paraguay. In Guarani, one way of specifying abundance is by repetition of a word. So, “vorí” is one, but “vorí vorí” can be two or more.
