Ceviche all year long! Try this vegan version, a bowl full of vegetable deliciousness and nutrition.

- 1 Mango, peeled and diced
- 2 small Avocados, peeled and diced
- 2 Red Chili Peppers, de-seeded and chopped
- 1 small Red Onion, peeled and diced finely
- 2 Limes
- 4-6 Hearts of Palm, sliced
- Cilantro Leaves
- Mix the mango, avocados, onion, chili peppers, hearts of palm and cilantro leaves in a bowl.
- Add the juice of the two lemons.
- Mix again.
- Use some extra chili peppers and cilantro to garnish.
You may replace the chili peppers with your favorite veggie for a less spicy version.
