Vegan Ceviche

Recipe

Ingredients

  • 1 Mango, peeled and diced
  • 2 small Avocados, peeled and diced
  • 2 Red Chili Peppers, de-seeded and chopped
  • 1 small Red Onion, peeled and diced finely
  • 2 Limes
  • 4-6 Hearts of Palm, sliced
  • Cilantro Leaves
  • Salt

Directions

  1. Mix the mango, avocados, onion, chili peppers, hearts of palm and cilantro leaves in a bowl.
  2. Add the juice of the two lemons.
  3. Mix again.
  4. Use some extra chili peppers and cilantro to garnish.

Pro Tips

You may replace the chili peppers with your favorite veggie for a less spicy version.
