Spicy Chicken Wings

Ingredients

  1. 2 lbs Chicken Wings
  2. 1 tbsp chipotle powder
  3. 1 tbsp ground cumin
  4. 1 tbsp onion powder
  5. ½ tbsp coriander seed power
  6. ½ tbsp turmeric powder
  7. 4 cloves garlic, minced
  8. 1 orange juiced
  9. 1 lime juiced
  10. 2 tbsp Mustard
  11. 2 cups rice flour
  12. 1 cup ap flour
  13. 1 Mazola corn oil bottle  for frying
  14. Salt and pepper to taste

Directions

  1. In a medium bowl add chipotle, cumin, onion powder, coriander, turmeric, garlic, orange juice, lime juice, mustard and salt and pepper to taste. Whisk to combine. Next add in chicken wings and incorporate together. Wrap and store in fridge for at least 30 min, best if overnight.
  2. In a medium to large pot add in enough Mazola oil to be at least 3 in deep. Preheat to about 350 degrees. Place rice flour and ap flour in another bowl with the marinated wings in a bowl right next to it.
  3. Frying time. Working in batches lightly dredge wings in rice flour before carefully placing them into frying oil. Let them cook until fully done and golden brown, about 8 minutes. Remove with a spider and let drain on a pan with paper towels, season lightly with salt.
  4. Serve with crudite and your favorite sauce!
