Spanish Meatballs in Almond Sauce

These luxurious meatballs are ideal as an appetizer for any party.

Ingredients

For the meatballs:

  • 2 oz. Bread Crumbs
  • 3 tbsp. Water
  • 1 lb. Ground Pork
  • 1 large Onion, finely chopped
  • 2 Garlic cloves, minced
  • 2 tbsp. Parsley, chopped
  • 1 Egg, beaten
  • 1 tbsp. Nutmeg
  • Salt & Pepper
  • Flour for coating
  • Olive oil
  • Lemon juice

For the Almond Sauce:

  • 2 tbsp. Olive Oil
  • 2 slices White Bread, torn
  • 4 oz. blanched Almonds
  • 3 Garlic cloves, finely chopped
  • 5 oz. White Wine
  • Salt & Pepper
  • 2 cups Vegetable Stock

Directions

  1. Combine ingredients for meatballs except olive oil and lemon juice in a large mixing bowl. Knead together until smooth. With floured hands, roll into small balls. Roll each meatball in flour until coated.
  2. Heat olive oil and cook meatballs in batches about 4-5 minutes, until browned on all sides. Using a slotted spoon, remove from skillet and set aside
  3. In a separate skillet heat the olive oil for the almond sauce. Add bread and almonds, stirring frequently until golden brown. Add garlic and wine. Bring to a boil. Season to taste and let cool.
  4. Transfer the almond mixture to the food processor. Add vegetable stock and blend until smooth. Return to skillet and add meatballs. Let simmer for about 25 minutes or until tender.
  5. Transfer to a serving dish and finish with lemon juice.
