Purple Cauliflower Salad

Cauliflower is a great source of vitamin C, helps keep the heart healthy and you can have it all day long!

Recipe

Ingredients

For the dressing:

  • ¼ cup Cilantro, chopped very fine
  • ¼ cup Lemon juice
  • ¼ cup Lime juice
  • ½ cup Olive oil
  • Salt & pepper to taste

For the salad:

  • 1 ½ cup sliced Purple Cauliflower
  • 1 ½ cups shredded Kale
  • ¼ cup shredded Red Cabbage
  • 1 cup Radishes, quartered
  • 1 tbsp. Chia seeds

Directions

For the dressing:

  1. Combine all ingredients except the olive oil in a blender jar. Slowly pour in the olive oil while blending on high until a vinaigrette forms. Reserve.

For the salad:

  1. Combine all ingredients in a large mixing bowl. Add 2-4 oz. of dressing.
  2. Toss & Enjoy!

Pro Tips

Add some red chile flakes to the dressing for a spicy flavor.
