Ingredients
For the filling:
- 2 Garlic Cloves
- 1 Red Bell Pepper
- 1 Onion
- Olive Oil
- Salt and Pepper
- 1 lb. Spinach
- 2 Eggs
- Nutmeg
- Shredded Cheese
For the dough:
- 1 cup All-Purpose Flour
- Salt and Pepper
- 3 Eggs
- ¼ cup Milk
- 1 stick Butter
To finish:
- Shredded Cheese
- 4 hard boiled Eggs
Directions
- Chop garlic, bell pepper, and onion. Stir fry them in a pan with olive oil. Season with salt and pepper.
- Transfer to a bowl and reserve.
- Mince the spinach finely, add to fried vegetables and add two whole eggs. Season again and incorporate with grated nutmeg and shredded cheese.
- Make a pie dough by hand with the all-purpose flour, 3 eggs, milk and butter.
- Extend the pie dough with a roller and line a baking container, add a thin layer of shredded cheese before transferring the spinach.
- Add 4 hard boiled eggs and finish with the top layer of dough. Varnish it with egg yolk and sprinkle some extra flour on top.
- Bake for 30 mins at 375°F
- Let it cool before serving.
