Recipe

Ingredients

For the filling:

  • 2 Garlic Cloves
  • 1 Red Bell Pepper
  • 1 Onion
  • Olive Oil
  • Salt and Pepper
  • 1 lb. Spinach
  • 2 Eggs
  • Nutmeg
  • Shredded Cheese

For the dough:

  • 1 cup All-Purpose Flour
  • Salt and Pepper
  • 3 Eggs
  • ¼ cup Milk
  • 1 stick Butter

To finish:

  • Shredded Cheese
  • 4 hard boiled Eggs

Directions

  1. Chop garlic, bell pepper, and onion. Stir fry them in a pan with olive oil. Season with salt and pepper.
  2. Transfer to a bowl and reserve.
  3. Mince the spinach finely, add to fried vegetables and add two whole eggs. Season again and incorporate with grated nutmeg and shredded cheese.
  4. Make a pie dough by hand with the all-purpose flour, 3 eggs, milk and butter.
  5. Extend the pie dough with a roller and line a baking container, add a thin layer of shredded cheese before transferring the spinach.
  6. Add 4 hard boiled eggs and finish with the top layer of dough. Varnish it with egg yolk and sprinkle some extra flour on top.
  7. Bake for 30 mins at 375°F
  8. Let it cool before serving.

Pro Tips

Use mozzarella or parmesan cheese for best results.
