Choosing your breakfast foods should be an easy decision, and eggs are a no-brainer, as they are healthy -they’re full of protein- and they are tasty. But eating plain eggs can get old quickly, so here are five easy recipes that take the humble egg to another level.

Let’s travel to Mexico with these huevos rancheros!

This recipe has become really popular throughout Latin America, but the original comes from Mexico and is loaded with flavor. To make it, you will need a tomato, chiles, garlic, eggs and a couple of tortillas. Cook the eggs in a mix of these ingredients and serve with a couple of tablespoons of refried beans to give it an even more special touch.

How about some Eggs Benedict?

A classic! This exquisite and quasi simple preparation will ensure that your breakfast or brunch is a success, with its scrumptious flavor and elegant presentation. There are publications that attribute its creation to the renowned restaurant at the Waldorf Astoria hotel in New York. In an interview recorded in the “Talk of the Town” column of The New Yorker in 1942, the year before his death, Lemuel Benedict, a retired stock broker, said that he walked into the Waldorf Hotel in 1894 and, hoping to find a cure for his hangover, ordered “buttered toast, poached eggs, crisp bacon, and hollandaise sauce”. Oscar Tschirky, the maître d’hôtel, was so impressed with the dish that he put it on the breakfast and luncheon menus. The original recipe uses an English muffin base, but it can be varied with other kinds of bread. The star of this dish is a rich and silky hollandaise sauce [French hollandaise, feminine of hollandais ‘Dutch,’ from Hollande ‘Holland]’.

Huevos Pericos with Arepa and Hot Chocolate

Bring a little bit of Colombia to your table with this tasty breakfast. In some areas of the Colombian coffee region, it’s traditional to start the day with foods that give you a lot of energy. Huevos pericos are scrambled eggs made with finely chopped tomato and onion, commonly cooked with butter in a small saucepan. To make it even more irresistible, this breakfast is served with a freshly baked arepa topped with a little butter, salt and fresh cheese. A steaming cup of hot chocolate goes really well withe these eggs!

Egg Muffin with Vegetables and Mozzarella

A fun and different way to enjoy eggs in the morning are these egg muffins loaded with veggies and mozzarella cheese. The only special thing you will need is a mold for cupcakes. To prepare this dish, simply mix eggs in a bowl with chopped onion, peppers, spinach, or any other vegetable you like, and place in a greased cupcake mold. You can also add bits of ham for a richer flavor. Mix the ingredients inside the mold, add the cheese on top and bake until golden. Enjoy a savory cupcake that is actually good for you!

 Egg and Avocado Toast

Avocado is an exceptional food that can be enjoyed at any time of the day. A good way to include it in your breakfast is this simple egg and avocado toast. All you need is a good slice of toasted bread, covered with avocado. Add lemon, salt and pepper and a touch of olive oil.
