Let’s be honest here. Avocado is a gift from the gods! This fruit, which originated in Central Mexico, is not only really delicious, but is also loaded with vitamins, potassium and heart-healthy monounsaturated fatty acids. Wait, did you say fruit? Yes, many people think avocado is a vegetable, but it actually classifies as a berry!

Avocado owes its popularity in big part to guacamole, but there are so many other preparations you can make using avocado. Here are 6 recipes that are a testament to its versatility.

Avocado Ice Cream

Hey, don’t mock it till you try it! The creaminess of the avocado lends itself well to making ice cream. To prepare this unique treat, blend together ripe avocados, sweet condensed milk, lime juice, heavy cream and milk. Freeze and then churn in an ice cream maker. You won’t believe your taste buds!

Spicy Salmon with Avocado Salsa

This recipe calls for really fresh salmon fillets rubbed with spices like paprika, onion powder, ancho chili powder and black pepper and then grilled to perfection. Top with a salsa made with diced avocados, red onions, cilantro and lime juice.

Avocado Pesto

Did you know avocado is an exquisite and healthy substitute for pasta sauce? Swap your pesto for a sauce made with avocados, fresh basil, garlic, lime juice, salt and pepper. Mix with your favorite pasta, cooked al dente, of course.

Baked Egg in Avocado

Easy, delicious and sure to be a great start to your day! To make this baked egg, take an avocado sliced in half, peeled and pitted, place an egg in the pit cavity and sprinkle with salt and pepper. Bake until the eggs are cooked but the yolk is still soft, and top with crispy bacon and feta cheese.

Avocado Super Green Smoothie

Give your body a boost with a super delicious avocado green smoothie. Just blend avocados, spinach, green apple, frozen mango and your favorite milk substitute. This works well as a meal replacement too!

Sweet Potato and Avocado “Toast”

Reinvent the avocado toast by replacing the bread with slices of grilled sweet potato, topped with lemony mashed avocado, a poached egg and a generous amount of black pepper.

As these recipes show us, avocado can be used in both savory and sweet recipes, making it a go to ingredient in any foodie’s kitchen. Which one will you try?
