Cover with the Redi-Temp® valve open and cook at medium-high for approximately 4 minutes, until it whistles. Reduce temperature from high to low and cook for another 10 minutes, until the valve sounds again, and beets are soft.
With the Royal Prestige® Salad Machine, slice the beets with the #5 Cone, which will create a wavy pattern. Place them in the 3-quart Mixing Bowl and refrigerate for 10 minutes.
To prepare the dressing, pour orange juice, blue agave honey and red wine vinegar into the 2-quart Mixing Bowl and mix using the Precision Series Whisk.
Finally, in the 5-quart Mixing Bowl, combine arugula, crumbled goat cheese, mandarin wedges, peach slices, pecans, the and chilled beets. Pour the dressing over the salad. Mix and enjoy!
